Herb vinaigrette
Ingredients
- 1/4 cup vinegar
- 2 tablespoons minced shallots
- 1 tablespoon minced garlic
- 1/4 cup assorted chopped fresh herbs (combine basil, tarragon, coriander, parsley or oregano)
- 1 teaspoon salt
- Freshly ground black pepper
- 3/4 cup olive oil
Instructions
- Place vinegar, shallots, garlic, herbs, salt and pepper into a bowl.
- Slowly whisk in olive oil until completely emulsified.
- Use immediately or store in a airtight container and refrigerate for up to 3 days.
Makes: 1 cup
Tips
- Lemon juice can be used instead of vinegar.
