Sage

Sage is a perennial that grows to 75cm tall. The woody shrub has long oval grey-green leaves that have a velvety texture. The flowers borne on spikes in spring and have a range of colours from pink to red, purple, blue or white depending on the variety. The most popular types are common or garden sage, purple sage, pineapple sage and golden sage. Sage becomes woody after four years.

Growing Methods

Seeds should be planted in seed boxes in late spring, when seedlings have grown to 8-10cm tall they can be planted in the garden spaced 45cm apart. Cuttings can be taken once 10cm long in autumn or spring. Remove any lower leaves and plant in small pots containing soil mix, peat moss and coarse sand. Cover with a plastic bag to create a mini-greenhouse. Once the cutting has developed roots and new leaves it can be moved into the garden.

When planting sage apply plant food and water well each week. Slugs are a common problem, pick them off by hand or place a stale beer trap. Spider mites should be sprayed with insecticide or plants should be removed to prevent further spreading. Root rot can be avoided by providing good drainage.

Harvesting

Leaves can be picked at any time, if drying place on racks in a cool place, store in airtight jars once dried. Fresh leaves can be stored in plastic wrap and frozen for up to six months.

Uses

Fresh and dried leaves can be used in stuffings, marinades, soups and stews. Sage can also be used in hair rinses which will darken grey hair.
